Life can feel hard sometimes but this easy recipe is sure to add a little sweetness to it and bring you a smile. It requires only six staple ingredients and just 20 minutes of your time.
These cookies are egg less, rich in protein and fiber and loaded with healthy fats. Go on and indulge in them absolutely guilt free.

INGREDIENTS
1 cup creamy peanut butter
2 tbsp water/coconut water
1/2 cup coconut sugar/jaggery powder
1/2 tbsp baking powder
2 tablespoons - 1/4 cup coconut flour/peanut flour
1/2 cup cacao nibs/chocolate chips
2 tbsp water/coconut water
1/2 cup coconut sugar/jaggery powder

1/2 cup cacao nibs/chocolate chips
INSTRUCTIONS
Put all ingredients except chocolate chips in a bowl; mix until smooth. Fold in chocolate chips and pour into a greased baking dish. Actually, it's better to line the dish with parchment paper. I made one huge cookie but you can make a few small ones if you like. You may also dot the tops with extra chocolate chips and microwave it for 3 minutes or bake at 350 F. for 20-25 minutes, or until slightly golden.
I generally avoid sugar in my recipes but happy to let you know that using brown sugar will enhance the flavor slightly and the cookies will have a deeper, golden color to it. You can also add honey or maple syrup instead of sugar to get a gooier texture. Happy Baking!
