Yup! grain free, dairy free, sugar free and yet so delicious, this coconut almond flour cake is totally born for bliss!
This low carb cake is vanilla flavored and has just the right amount of sweetness which by the way grows gradually. It’s really quick and easy to bake and this recipe can also be used to make muffins, cupcakes and other fun bakes.
Pro tip is to really sift the flour thrice or more. It does improve the texture of the cake. Coconut flour absorbs a lot of liquid and yet the batter appears to be thick unlike other cake batter.
So, please don’t keep adding more liquid than what is mentioned in the recipe.
Now, lets have a look at the healthy ingredients :
- 1/2 Cup Coconut Flour + 1/2 Cup Almond Flour
- 1/2 Cup Melted Ghee/Coconut Oil or White Butter+ 1/2 cup drinking water
- 2/3 Cup Coconut Sugar/ Jaggery Powder
- 1/2 Teaspoon Sea Salt
- 1 Teaspoon Baking Powder
- 2 Teaspoons Vanilla Extract
- 2 Eggs
- 2 Teaspoon cacao nibs
Here are the instructions to prepare the cake :
You can simply use a microwave or preheat the baking oven to 350 degrees.
Blend the sugar with all the wet ingredients like eggs, oil, salt and vanilla together.
Add a spoonful of dry ingredients at a time and mix until the batter is completely blended.
Place the batter into a greased microwave safe dish or a small baking pan in case using OTG.
Microwave takes 5 to 6 mins and baking the cake in OTG takes 25 - 30 minutes.
Your cake is nicely baked when it leaves the sides of the pan and a toothpick inserted into the center of the cake comes out clean and non sticky.
You can also use coconut cream or any of your favorite frosting but just allow the cake to cool before frosting. I made it using the microwave and it came out fabulous. Try it and let me know how it turns out. Until next time, stay blissful and keep smiling!
